Recipe

If you don't have your own delicious recipe of Funeral Potatoes... here is mine:

One bag of frozen shredded hash browns (26-30 oz) or 12 potatoes shredded
2 cans cream of chicken soup
2 cups (16oz) sour cream
1 cup grated cheddar cheese
1/2 cup melted butter
1/3 cup chopped onion
2 cups cornflakes

Pre-heat oven to 350 degrees. Mix cream of chicken soup (unprepared), sour cream, melted butter, onions, and cheddar cheese together. Then fold in potatoes to mixture. Place in 9x13 pan. Cover with cornflakes. Bake 1 hour or until bubbly. Enjoy cheesy goodness.

Now you know why the calories for a serving of these delicious potatoes is probably off the charts. But the deliciousness is worth it!

P.S. You can probably leave out the melted butter. I do sometimes and don't notice the difference. Totally your call though!

I also put a packet of dried ranch dressing mix in mine. So good!
